Just finished making these apricot toffee bites. They are easy to make and a good mid-morning or afternoon snack for the whole family.
Ingredients:
12 unsulphured dried apricots (I soaked them in boiling water so would be easier to blitz)
80g raw unsalted almonds
1 tbsp almond butter
1 tbsp chia seeds
1 tbsp of coconut oil
2 tsp of raw unsweetened cacao powder (I use Naturya)
Method:
Place all the ingredients in a food processor and blitz for approx 2-3mins. I did it in batches as it was easier. Eventually you end up with a sort of paste.
Shape the mixture into approx 20 balls and then roll in dessicated coconut (You can leave this step out if you wish).
Store them in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 2 months. Enjoy!
