The best wheat-free oat bread

After a lot of attempts at making bread, I have found a lovely bread that the whole family can eat! Inspired by my sister as she has perfected it! Into the bargain it is wheat free and gluten free if you use gluten-free oats.

Ingredients:
1 x 500g tub of greek yogurt
2 x 500g tubs of porridge oats (reuse the yogurt tub). Use gluten-free oats if you are coeliac
2 tsp baking soda (make sure it is gluten free)
2 eggs
1 tsp of salt

Method:
Preheat oven at 200C
Mix everything together
Put into a loaf tin with parchment paper (trust me, you need this as I had stick issues when I didn’t use it!!)
Once in the loaf tin, bake at 200C for 15mins
Reduce heat to 175C and bake for another 30mins
Take out of the tin, take off parchment paper and back into the oven upside down for another 5-10mins until it is hollow when u knock it.
Take out and leave to fully cool before slicing (this can take up to an hour)

We’ve made this bread about 6 times now and we just love it! They key ingredient is the yogurt, it has to be greek or greek style, not natural yogurt nor low fat, tried them all. I’ve used a few greek types and they all work. This one is with unsweetened greek style Supervalu own brand yogurt.

This bread is delicious with a bowl of soup on these cold days or simply with salad/egg mayo/cheese, whatever takes your fancy. It is hearty, oaty and full of nutrition. I’m delighted my daughters like it as know they are getting something healthy and nutritious and full of fibre.
